Greentoft Farm’s Thelma Bruce has been a regular fixture at the monthly Orkney Farmers’ Market for the past 14 years. She started off as a stallholder selling free-range eggs from her family’s Deerness farm, before using the surplus to expand into baking.

Now Thelma makes and sells everything from lemon curd and jams, to shortbread, cakes, scones, rock buns, fatty cutties and bere bannocks. Her traditional Orkney baking has proved enormously popular and Thelma has built up a loyal following throughout the County. She actively encourages her regular customers to request new products from her and is always happy to try out different recipes.
High quality Orkney butter, cheese and milk are key ingredients in all of Thelma’s baking, along with her free-range hen and duck eggs.
