Colin Luke's Fillet Steak

Colin's cheese-stuffed Orkney fillet steak wrapped in bacon, served with sweet & sticky onions and mushrooms, sweet potato mash and a Highland Park sauce


For the steak:

  • 2 x 2 inch thick Orkney fillet steaks (room temperature)
  • 4 x rashers smoked streaky bacon
  • Island Smokery Orkney smoked cheese
  • Island Smokery garlic butter

  • Island Smokery garlic butter
  • 1 x ded onion
  • 6 x chestnut mushrooms
  • Splash of red wine
  • 2 x teaspoons brown sugar
  • Splash of balsamic vinegar

For the mash:

  • 1 x large sweet potato
  • 3 x medium potatoes
  • 1 x small leek
  • 1 x spring onion
  • 1 x tablespoon soft cheese
  • 1 x knob of Island Smokery garlic butter
  • Sprinkle of dried chilli flakes
  • Smoked paprika

For the stir-fry medley of vegetables:

  • Toasted sesame oil
  • Light soy sauce
  • Chopped ginger
  • Chopped garlic

For the Sauce



  1. Peel and cube all potatoes and bring to boil until tender
  2. Add the leeks in the last 5 minutes. 
  3. Add the soft cheese and spring onions, chilli flakes, garlic butter and mash together.

  1. Brown the onions and mushrooms in garlic butter. 
  2. Add red wine, balsamic vinegar and brown sugar.  
  3. Simmer until caramelized.


  1. Make a slit in the side and stuff with a slice of smoked cheese. 
  2. Wrap the outer edge in streaky bacon, pinning the edge with a cocktail stick. 
  3. Rub over top and bottom with oil and season well with salt and pepper. 
  4. Cook on a hot dry frying pan for 5 mins on each side (med/rare) or to taste preference. 
  5. Brown the bacon covered edges using tongs. 
  6. Leave to rest 10 mins

Stir-fry medley

  1. Heat sesame oil, soy sauce, ginger & garlic on a medium heat. 
  2. Add stir fry vegetables, cook for 5 mins.

Highland Park sauce

  1. Deglaze the pan that had the steaks in it with Highland Park.
  2. Add cream and simmer until it thickens. 
  3. Season with salt & pepper.

To serve:

  1. Place steak on a heated plate.
  2. Press mash into a round pasty cutter, finish with a dusting of smoked paprika. 
  3. Place stir fry vegetables on side and place sticky onions and mushrooms on top of the steak. 
  4. Serve the whisky sauce in a small jug.
