The 2017 Orkney Amateur Master Chef competitors take to the stage tonight (September 27th) to cook their delicious menus in front of a live studio audience.
They'll all be using the very best local ingredients to create their dishes and to impress the panel of judges.
Our final entrant, Callum MacInnes, will be relying on his own products to take him to the title! He's the man behind the Island Smokery - find out more about his Master Chef plans below.
NAME: Callum MacInnes
MASTER CHEF MENU: Starter - Orkney dived scallops in Island Smokery Cracked Black Pepper Butter, with prosciutto crumb and a pea and mint puree. Main - Baked salmon with a pistachio and herb crust, with carrot and almond sweet potato mash. Sweet - Orkney rhubarb syllabub with a rhubarb gin chaser.
WHY DID YOU ENTER: I have had the pleasure of sitting in the judges chair twice and thought it only fair that I should stand up and be counted.
HOW ARE YOU PREPARING: I'm not too sure as I am away most of September, but I will run through it a couple of times if I get the chance.
HOW EXPERIENCED IN THE KITCHEN ARE YOU: I do most of the cooking at home and find it quite relaxing, especially if you are cooking something special. Get the music turned up, pour a glass of red wine and enjoy yourself. It’s also very good for brownie points.
FAVOURITE DISH: I love to make a curry for the family.
FAVOURITE INGREDIENTS: I like to use soy sauce and include onions in most things I cook.
GUILTY PLEASURE: Pasta made with Smoked Cheddar, onions and bacon. Great winter fuel.
ANY KITCHEN DISASTERS: I always struggle with chocolate - usually I push it too far and it always ends up in the bin. I once also spread toast with garlic butter, then marmalade. Always put your glasses on when you get up in the morning.
SECRET KITCHEN TALENT: No secret talent and I'm still very much trying to learn, but I'm always keen to try something new.
